watermelon cookie

Before the summer is totally gone, I have to post about these not-so-healthy watermelon slices. I found this cute sugar cookie idea from the decorated cookie and I had to try it. This is how they turned out:
The black seeds were my favorite part.

Delicious Toy Story

I'm back.. after a long absence. I've missed you, blogging world! Sorry about my lack of posting, summertime takes over. I can't argue with nice weather, family in town, vacations, etc.

So... here is my latest creation in the kitchen.

Here's another delich-dish that has made me happy at several lunch hours.

Here's how:

Layer tomatoes, fresh mozza, fresh basil leaves and italian dressing atop a fresh Ciabatta loaf.

What a pretty little sandwich. Photobucket

B-day Bash

My little boy turned one last weekend, so we of course partied with him. I made a little b-day banner, hung some chinese lanterns, and made my first tiered cake for him.

I was told it looks a little like a Dr. Seuss cake. I like Dr. Seuss so I'm okay with that :)
It's not perfect, but it was fun to try.

Grapefruit Revolution

I'm a lover of grapefruit.

Always have been.

Memories with the fruit go way back to Grandma's house and the spoon with the little ridges. Dangerous utensil if you ask me. Anyway... this past weekend while sitting in a little Cafe in the heart of San Fran my eyes ran across an interesting menu item. Broiled Grapefruit??

Never heard of it.

Just tried it.

It's revolutionary. All you do cut the fruit in two and broil them facing up for about 5 minutes. The heat caramelizes the top and turns a somewhat tart experience into a sweet/tangy sensation.

And it's gone. Yum.

Edible Burton Custom Snowboard

Thank you, Linds, for posting that last entry about Stephanie. I've heard of "Nie Nie" before, but had never taken the time to look her up. She is someone who obviously has a firm grasp on the meaning of life and the important things. I want (need) to be more like that.
I feel kinda silly now, posting about this latest cake I've made since it seems pretty trivial in comparison (and sorry it's another cake.. but maybe you can try it out yourself if you have a snowboard-obsessed husband, like me). I made it for my brother in law, Grayden, for his 14th birthday This is the snowboard he is really wanting:

So I made it's clone:

I cut my 9x11 cakes in half to make it flatter... more snowboard-like.
Then, I iced it in butter-cream frosting and laid my strips of marshmallow fondant sections.
Finally, I piped black butter cream around the edges and used the same icing to make the binding lines/dots and the Burton sign.
It was a fun project, Grayden loved it, too.

more cake please...

I tried fondant last week and to cover a couple more oval cakes. I just made it out of mini marshmallows and water. You can find the recipe here. I only made half the recipe (it makes a lot - covered both little cakes and still had some left over). It is so cheap and easy to make! I first made a little graduation cake for Brenan who is graduating from BYU this week! I piped the Y with royal icing and made dots to cover the sides out of the same icing.

Next, I had seen this piping techniques used on TLC's 'Ultimate Cake Off.' They had done the piping with chocolate, but I did it with yellow royal icing right onto my blue fondant. It took forever but it was so much fun. I'm addicted and I pretty much want to bake cakes and decorate them every day.

Happy Easter!

Happy Good Friday to you!
(This post is for you, Mom xoxo)
I just finished my last cake decorating class on Tuesday. I wish I had taken time to learn how to actually bake a cake and ice it from my Mom, who always made the most amazing cakes when we were growing up. Should have taken advantage of that.
I was stressin big time the day before the class because the oval cakes I made to stack together were completely falling apart. Even touching the cake with my finger would break off little chunks. Cake in your icing is not cute. I was so disappointed because I didn't have time to make another cake. I just had to accept that fact that I wasn't going to make my last class (the finale: using the flowers I'd made all month to put the cake together). Anyway, bless my husband's heart, he helped me salvage one of the cakes, so I did end up going.. and made the second cake that I posted here. When I got home that night, I had icing left over, so I decided to try to make a little egg out of my the left over cake that was in worse shape than the first. Enough icing covered up the gaping holes :) Since I didn't decorate my house for Easter AT ALL, nor did we paint Easter eggs, at least we can feel a little festive looking at this:

By the way, I highly recommend learing how to cake decorate from your Mom before you move 12 hours away. If you made my mistake, I recommend taking a Wilton Cake decorating class. I think they offer them at most Michaels'.

Granola {from Scratch}

This granola recipe is so delicious and ridiculously easy to make. It will also save you a bundle, as granola is so expensive at the grocery store.

3 cups rolled oats
1 cup raw unsalted slivered almonds
1 cup chopped walnuts
3/4 cup shredded sweet coconut
3/4 cup raw unsalted sunflower seeds
1/4 cup plus 2 tablespoons light brown sugar
1/4 cup plus 2 tablespoons maple syrup (I use a sugar free kind and it tastes just as good)
1/4 cup vegetable oil
3/4 teaspoon salt

Preheat oven to 250 degrees F.
In a large bowl, combine the oats, nuts, coconut, and brown sugar.
In a small saucepan, combine maple syrup, oil and salt. Heat on low until warm but NOT boiling. Just to warm to coat everything nicely.
Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour, stirring every 15 minutes to achieve an even color.
Remove from oven and cool.
To make it into a healthy treat- freeze a cup of your favorite yogurt and add the granola on top. Yum!

Helpful hint - baking with raisins

Did you know???

I just discovered something amazing. If you are planning on baking anything in the near future with raisins in it-- make sure you soak the raisins in water first! It makes them plump and juicy! Forgive me if that is already common knowledge -- I just made oatmeal raisin cookies, with pre-soaked, delicious raisins. It makes all the difference.

Sugar Cookie Delight

Deliciousness is:
I found this great recipe here, but made a couple changes:
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream (fat free was okay to use)
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 3 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Frosting, sprinkles, colored sugar, decorations

Beat together butter and sugar. Add sour cream, eggs, and vanilla; beat well. Stir in flour, baking powder, baking soda, and salt. Mix well. Cover and refrigerate at least one hour.

Pre-heat oven to 350 degrees F

Roll dough out on a lightly floured surface to 1/4 inch thickness. Dip cookie cutters in flour then cut dough into desired shapes. Place cookies 1-inch apart on un-greased cookie sheet. Bake for 8-10 minutes (cookie will be a very light tan on bottom - tops will still be pale). Remove to wire cooling rack. Frost when cooled.

Butter Cream Icing:
  • 2/3 cup butter, room temperature (I used Country Crock light margarine and it worked pretty good)
  • 4 cups powdered sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla or almond extract
  • 2 tablespoons cream or milk
  • gel or paste food coloring

Beat together, adding more milk or powdered sugar to desired consistency.
