Granola {from Scratch}

This granola recipe is so delicious and ridiculously easy to make. It will also save you a bundle, as granola is so expensive at the grocery store.

3 cups rolled oats
1 cup raw unsalted slivered almonds
1 cup chopped walnuts
3/4 cup shredded sweet coconut
3/4 cup raw unsalted sunflower seeds
1/4 cup plus 2 tablespoons light brown sugar
1/4 cup plus 2 tablespoons maple syrup (I use a sugar free kind and it tastes just as good)
1/4 cup vegetable oil
3/4 teaspoon salt

Preheat oven to 250 degrees F.
In a large bowl, combine the oats, nuts, coconut, and brown sugar.
In a small saucepan, combine maple syrup, oil and salt. Heat on low until warm but NOT boiling. Just to warm to coat everything nicely.
Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour, stirring every 15 minutes to achieve an even color.
Remove from oven and cool.
To make it into a healthy treat- freeze a cup of your favorite yogurt and add the granola on top. Yum!
